What are the advantages and disadvantages of having a grip like Sachin Tendulkar, Sanath Jayasuriya and others and also the kind of batting grip that Adam Gilchrist uses? Does any modern day batsman use the correct batting grip as prescribed in coaching manuals?

The players you mention all follow the Australian technique. Cricketers who use this grip will be more on-side players. I believe the Australian grip hampers horizontal shots.

Basically, all players start off according to the coaching manual and then as time goes on, lots of finer aspects are brought in to suit individual players.

When I keep wickets, I have trouble collecting those balls that turn in from off and middle to outside leg as the batsman gets in the way of my vision. So how do I collect these balls cleanly?

Just to give you my uninformed opinion, in close-in fielding positions, the first slip and the wicket keeper have to watch the ball from the time it leaves the bowler’s hand to the time he collects the ball. Fielders in positions from second slip to gully should watch the edge of the bat. For leg side collections, the wicket keeper has to move towards the leg side watching the line of attack. He should not move towards the leg side after the ball has pitched, because the batsman would block his vision.

The wicket keeper should wear a helmet for keeping to medium pacers or spinners when the ball is bouncing awkwardly off the track. This gives him confidence and allows him to focus on the game rather than worry about an injury.
